Milling

  • The barley is dressed after drying to catch any small stones or extraneous material
  • Milling then starts by popping the husk via a top roller in the barley mill
  • A second grinder or roller then grinds the kernel into 3 grades–
    • Husks 20%;
    • Grits (middles) 70%;
    • Flour (fines) 10%
  • These proportions are considered perfect for extracting maximum sugar
  • The husks also help the water drain better through the grist preventing a porridge effect from grits and flour
