Milling
- The barley is dressed after drying to catch any small
stones or extraneous material
- Milling then starts by popping the husk via a top roller
in the barley mill
- A second grinder or roller then grinds the kernel
into 3 grades–
- Husks 20%;
- Grits (middles) 70%;
- Flour (fines) 10%
- These proportions are considered perfect for extracting
maximum sugar
- The husks also help the water drain better through
the grist preventing a porridge effect from grits and
flour
